Thomas Jefferson's Macaroni and Cheese (Presidential Favorites- Year Four: Volume 11; February, 2014)


Prep time: 15 min
Cook time: 20- 24 min
Ready in: 35- 39 min
Serves: 4- 8

Ingredients: 
16 oz. large, elbow macaroni
2 c. milk
2 c. water
1/2 tsp. salt
1 1/2. c. Parmesan- grated
1 1/2 c. mozzarella- grated
4 T. butter- grated (+ more for greasing dish)

Directions: 
- Bring water and milk to boil in a large pot
- Preheat oven to 450
- Butter a 13x9" glass baking dish and set aside
- Cook noodles in boiling milk/ water until tender, about 8-10 min
- Drain, but do not rinse
- Toss pasta and salt until well-mixed
- Add 1/2 macaroni to baking dish
- Sprinkle 1/2 each cheese over macaroni
- Sprinkle 1/2 butter over cheese
- Repeat with remaining macaroni, cheese, and butter
- Bake until cheese begins to lightly brown on top, about 12- 14 min
