Refrigerator Soup (White Trash Bistro- Year One: Volume 7; October, 2010)


Prep time: 5 min
Cook time: 30 min
Ready in: 35 min
Serves: 8

Ingredients:
1 bunch celery- chopped
1- 2 onions- chopped
4- 6 carrots- chopped
Olive oil
5 strips bacon
2 (15 oz.) cans kidney beans
1 pkg. spinach
1 pkg. mixed vegetables
1 qt. chicken or beef broth
1/4 pkg. egg noodles
1 carton red pepper soup

Directions:
- In a soup pot, saute celery, onion, and carrots in olive oil
- Add  kidney beans
- In separate pan, fry bacon until crispy, then add to soup pot
- Add remaining ingredients to soup pot and cook until noodles and veggies fully cooked
