Irish Soda Bread (Luck o' the Irish- Year One: Volume 12; March, 2011)
Prep time: 10 min
Cook time: 30- 50 min
Ready in: 40 min- 1 hour
Serves: 6
Ingredients:
4 c. flour
4 T. sugar
1 tsp. baking soda
1 T. baking powder
1/2 tsp. salt
1/2 c. butter- softened
1 c. buttermilk
1 egg
1/4 c. butter- melted (for brushing before baking)
1/4 c. buttermilk (for brushing before baking)
Directions:
- Preheat oven to 375
- Lightly grease a large baking sheet
- In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and 1/2 c. softened butter
- Stir in 1 c. buttermilk and egg
- Turn dough out onto a lightly floured surface and knead slightly
- Form dough into a round and place on prepared baking sheet
- In a small bowl, combine 1/4 c. melted butter with 1/4 c. buttermilk
- Brush loaf with this mixture
- Use a sharp knife to cut an "X" into top of loaf
- Bake until a toothpick inserted into the center of the loaf comes out clean, about 30- 50 min
- Continue to brush loaf with butter mixture while it bakes
