Orange Chocolate Guinness Cake (Luck o' the Irish- Year One: Volume 12; March, 2011)

Cook time: 35- 40 min
Ready in: 1 hour, 35- 40 min
Serves: 6

Ingredients:
CAKE:
1/4 c. butter- softened
1 1/2 c. dark brown sugar
2 c. self-rising flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2 T. cocoa powder
Zest of 1 orange
4 eggs
1/2 c. Guinness (or other stout beer)

ICING:
1/4 c. butter- softened
1 3/4 c. powdered sugar
Zest and juice of 1 orange

Directions:
- Preheat oven to 375
- Grease two 8- 9" cake pans
- Cream butter and sugar until light and fluffy
- Ssift flour, baking powder, salt, and cocoa into a separate bowl
- Add orange zest to the creamed butter
- Beat in eggs, one at a time, including a spoonful of the flour mixture with each egg and beating well between additions
- Gently mix in Guinness, 1 T. at a time, including another spoonful of flour with each addition
- If there's any flour left over, fold it in gently to mix
- Blend thoroughly without over-beating
- Divide mixture between the pans and smooth down
- Put cakes into center of preheated oven
- Reduce heat to 350 and bake until the cakes are springy to the touch and shrinking slightly in the pans, about 35- 40 min
- Turn out and cool on a wire rack
- While baking, for icing, cream butter and sugar
- Blend in orange juice and zest
- Ice bottom layer with 1/3 c. icing
- Pace second layer on top, ice sides with half of remaining icing, and use the rest of the icing on the top
