Green Bean and Gorgonzola Casserole (Cheeeeeeesy- Year Three: Volume 8; December, 2012)


Prep time: 20 min
Cook time: 1 hour, 30 min
Ready in: 1 hour, 50 min
Serves: 6- 8

Ingredients:
CASSEROLE:
4 T. butter
1 onion- sliced
1 c. dried cranberries
2 cloves garlic- chopped
1 tsp. thyme- chopped
Salt (to taste)
Pepper (to taste)
1 splash sherry or white wine
1 lb. green beans- trimmed, cut into bite-sized pieces
2 T. flour
1 c. milk
1/2 c. blue cheese- crumbled
1/4 c. panko breadcrumbs

FRENCH FRIED ONIONS:
3 large onions- sliced into thin rings
2 c. milk
2 c. flour
Oil (for frying)
Salt (to taste)

Directions:- Melt 1 T. butter in a pan
- Add casserole onions and slowly cook until they caramelize, about 20- 30 min
- Add 1 T. butter and melt
- Add cranberries and cook until heated through, about 10 min
- Add garlic, thyme, salt, and pepper and saute until fragrant, about 5 min
- Add sherry and deglaze pan
- Add green beans and saute until bright green and just starting to turn tender but still crisp, about 5 min
- Melt 2 T. butter in a small sauce pan
- Add casserole flour and stir until lightly golden brown
- Add casserole milk and simmer until it thickens
- Add blue cheese and simmer until it melts
- Add green beans and cranberries and toss to coat
- Pour mixture into an 8 x 8" baking dish
- Peheated oven to 400
- Soak onions, for French fried onions, in their milk for 5 min
- Heat oil in a large skillet or deep fryer
- Take a handful of onions and run them through flour with a fork to coat
- Fry in batches, stirring as needed to brown evenly
- Drain on paper towels and season to taste
- Top with casserole with breadcrumbs and french fried onions
- Bake until sides are bubbling and top is golden brown, about 5- 10 min
