Macaroni and Cheese (Cheeeeeeesy- Year Three: Volume 8; December, 2012)

Cook time: 20 min
Ready in: 35 min
Serves: 6

Ingredients:
2 c. milk
1 (12 oz.) pkg. elbow macaroni
2 T. flour
3 T. butter
3/4 tsp. salt
3/4 c. fontina cheese- shredded
3/4 c. cheddar cheese- shredded
1/2 c. Comte or Gruyere cheese- shredded
1 1/2 tsp. white truffle oil

Directions:
- Cook noodles according to directions
- Melt butter in large saucepan
- Place flour in saucepan
- Gradually add milk, stirring with a whisk until blended
- Add truffle oil and continue to whisk
- Cook over medium heat until thick, stirring constantly with a whisk, about 8 min
- Remove from heat
- Let stand until sauce cools, about 4 min
- Add cheeses and stir until cheeses melt
- Stir in cooked macaroni, salt, and pepper
