Coconut Thai Curry (Cupid's Delight- Year Two: Volume 11; February, 2012)


Prep time: 15 min
Cook time: 20 min
Ready in: 35 min
Serves: 6

Ingredients:
1 can coconut milk
1 jar Trader Joe's red curry sauce
1/2 white onion
1 potato
1 bag mixed veggies (carrots, cauliflower, and broccoli)
1 yellow or orange pepper
3 c. cooked rice (for serving)
Naan bread (for serving)

Directions:
- Cut up veggies into cubes
- In a skillet, over medium-high heat, stir all ingredients
- Bring to a boil
- Reduce heat and cover for 10 min, stirring once or twice
- Remove lid and cook, stirring frequently until veggies are tender, about 10 min
- Let stand for 2- 5 min to thicken sauce
- Pour over rice and enjoy with naan bread
