Chicken Tikka Masala with Yellow Rice (East Meets West- Year Three: Volume 3; July, 2012)



Prep time: 30 min
Chill time: 1 hour (up to overnight)
Cook time: 4- 8 hours, 10 min
Ready in: 4- 8 hours, 40 min
Serves: 4

Ingredients:
TIKKA:
1 c. plain yogurt
1 T. lemon juice
2 tsp. cumin
1/4- 1 tsp. cayenne (depending on how spicy you like it)
1 tsp. cinnamon
1 tsp. pepper
1 tsp. salt
6- 8 chicken thighs

MASALA:
1- 2 tsp. vegetable oil
1 onion- diced
2 garlic cloves- minced
2" ginger- grated (freezing in advance will make it easier to grate)
1 (28 oz.) can diced tomatoes
1 (5.5 oz) can tomato paste
1 T. garam masala
1 T. tikka paste (or mild curry paste and 1 T. lemon juice)
1 tsp. cumin
1 tsp. chili powder
1 tsp. coriander
1/2 tsp. cumin
1/2 tsp. chili powder
1/2 tsp. garam masala
Salt (to taste)
1 c. cream
2 T. cilantro- chopped

RICE:
2 c. basmati rice
4 c. water
Salt (to taste)
1/2 T. turmeric
1/2 c. peas

Directions:
- Stir all tikka ingredients except chicken in a large container
- Add chicken and coat completely with marinade
- Cover and place in the fridge for at least 1 hour, up to overnight
- Turn oven to broil
- Cover a baking sheet with foil and place a rack over top
- Take chicken out of marinade, place on baking rack, and discard marinade
- Place under broiler about 6- 10" from heating element and broil on each side about 10 min
- Don't worry about cooking meat all the way through, this step is just to give it a nice browned color
- While chicken is broiling, in a pan over medium-high heat, add oil
- Add onion and saute to soften, about 5 min
- Add garlic and ginger and saute until mixture is nice and fragrant, about 5- 7 min
- Place mixture into your crock pot
- To that, add diced tomatoes, tomato paste, garam masala, tikka paste, and 1 tsp. each cumin, chili powder, and coriander
- Stir together
- When chicken is done broiling, add straight to the slow cooker and stir into masala sauce
- Cook on high for 4- 6 hours, or on low 6- 8 hours
- About 30 min before it is done, mix together all rice ingredients except peas and prepare by desired method (ie: stovetop, rice cooker, etc.)
- When rice is done, stir in peas
- When tikka masala is done cooking, stir in 1/2 tsp. each cumin, chili powder, and garam masala
- Add salt to tikka masala, if desired
- Stir cream and cilantro into tikka masala
- Serve a chicken thigh with lots of sauce over yellow rice
