Grilled Artichokes (High Tea- Year Three: Volume 2; May, 2012)


Prep time: 25 min
Cook time: 5- 15 min
Ready in: 30- 40 min
Serves: 4

Ingredients:
2 large artichokes
1 lemon- quartered
3/4 c. olive oil
4 cloves garlic- chopped
1 tsp. salt
1/2 tsp. pepper

Directions:
- Fill a large bowl with cold water
- Squeeze juice from one lemon wedge into the water
- Trim tops from artichokes
- Cut in half lengthwise
- Place halves into bowl of lemon water to prevent them from turning brown
- Bring a large pot of water to a boil
- Meanwhile, preheat a grill for medium-high heat
- Add artichokes to boiling water and cook for about 15 min
- Drain
- Squeeze remaining lemon wedges into a medium bowl
- Stir in olive oil and garlic
- Season with salt and pepper
- Brush artichokes with a coating of garlic dip
- Place them on the preheated grill
- Grill artichokes, basting with dip and turning frequently, until the tips are a little charred, about 5- 15 min
- Serve immediately with remaining dip
