Arroz con Pollo (Latin Lovers- Year Two: Volume 2, May, 2011)

Cook time: 50 min
Ready in: 1 hour
Serves: 4

Ingredients:
2 chicken breasts
Salt (to taste)
Pepper (to taste)
Olive oil
2 c. rice
1 onion- chopped
2 cloves garlic- chopped
2 green bell peppers- chopped
1 c. peas (optional)
1/2 c. green olives- pitted (optional)
2 T. tomato paste
5 c. chicken or vegetable stock

Directions:
- Salt and pepper chicken breasts to taste, then pan fry in olive oil until golden brown, 4-5 min per side
- Remove chicken, add more olive oil to the pan, and toast rice until lightly browned
- Add onion, garlic, and bell peppers; stir, then cook until onions are softened
- Salt and pepper to taste
- If adding peas and/ or olives, do so now
- Stir in tomato paste
- Place chicken breasts on top of the rice mixture
- Pour in stock
- Cook, covered, for 20-25 min
