Causa Limeña (Latin Lovers- Year Two: Volume 2, May, 2011)

Cook time: 20 min
Chill time: 30 min (minimum)
Ready in: 1 hour, 15 min (minimum)
Serves: 8

Ingredients:
CAUSA:
6 potatoes
2 limes- juiced
1/4 c. olive oil
1 tsp.- 1 T. aji amarillo (aji amarillo is a spicy paste made of yellow aji peppers- the more added, the spicier the dish will be)
Salt
Pepper

FILLING:
1 c. mayonnaise
2 T. white vinegar (+/- to taste)
Salt
Pepper
1 chicken breast- boiled and shredded
1/2 c. peas or corn- cooked and chilled

TOPPING:
1/2 red onion- thinly sliced
1 c. white vinegar
Salt
Pepper

Directions:
- Boil potatoes until soft
- Mash with lime juice, olive oil, aji amarillo, salt, and pepper
- FYI, mixture should be yellow and have a thick consistency; if it is too watery, add more potato, if not yellow enough, add more aji- but be careful because it is spicy
- Refrigerate mixture
- Mix mayonnaise, vinegar, salt, and pepper
- When happy with taste of this mixture, add chicken and peas or corn and mix well
- In a round dish or springform pan, spread half of potato mixture
- Spread the filling over potatoes
- Add final layer of potato mixture
- Refrigerate layered dish
- In a bowl mix the red onions with vinegar, salt, and pepper
- Let onions sit in the vinegar for at least 15 min
- Drain and place onions on top of the causa
- Serve cold, sliced or scooped out of dish
