Veggie Coleslaw (Tailgating- Year Six: Volume 6; September, 2015)


Prep time: 15 min
Ready in: 15 min
Serves: 8- 10

Ingredients: 
1 lb. white cabbage (1/2 small head)
3/4 lb. red cabbage (1/2 small head)
5 carrots
2 c. mayonnaise
1/4 c. Dijon mustard
1 T. sugar
2 T. apple cider vinegar
2 tsp. celery seeds
1 tsp. celery salt
1/2 tsp. salt
1/2 tsp. pepper

Directions:
- Fit food processor with thickest slicing blade
- Cut cabbage into small wedges and place horizontally into feed tube, processing in batches
- Next, fit food processor with grating blade
- Cut carrots in half and place in feed tube, lying on their sides, and process in batches
- Mix carrots and cabbage together in a bowl
- In a medium bowl, whisk together remaining ingredients
- Pour enough dressing over grated vegetables to moisten them
- Serve
