Ready in: 1 hour, 5- 10 min
Serves: 4- 8
Ingredients:
PASTA:
4 large eggs
3 1/2 c. flour- sifted
1 tsp. salt
1 T. water (more, if needed, for eggs)
3 large zucchini- cut into 3" lengths
1 batch marinara sauce
8 oz. fresh mozzarella- cubed
Directions:
- Break eggs into a glass measuring cup
- If they do not measure 7/8 c., add water 1 tsp. at a time until they do
- Place flour and salt in bowl of electric mixer and beat with flat beater on low (KitchenAid: speed 2) as you gradually add eggs and 1 T. water
- When all pasta ingredients are in mixer bowl, beat for 30 seconds
- Exchange flat beater for dough hook and knead on low (KitchenAid: speed 2) for 2 min
- Pour dough, which will be crumbly, onto a floured surface and knead by hand until smooth, pliable, and able to be formed into a ball; about 30 seconds- 1 min
- Form all dough into walnut-sized balls
- Allow dough to rest for 15 min
- Attach KitchenAid Pasta Press to mixer and turn mixer on to speed for shape of pasta to be made; for Recipe Club, I used bucatini and speed 10, according to pasta press manual
- Slowly feed dough into press' hopper, one ball at a time- helping auger to engage dough, if needed, with included combo tool
- When extruded pasta reaches desired length, swing dough cutter to cut it, as the press continues to extrude pasta (no need to stop mixer)
- Lay pasta flat on a floured surface, or hang to dry- I used a clothes-drying rack to dry ours!
- Bring a large pot of salted water to a boil
- While water is coming to a boil, heat marinara sauce, if necessary, allowing it to simmer until ready to serve
- Also while water is coming to a boil, put one piece of zucchini at a time into a Pampered Chef Spiral & Slice, and twist to create zucchini noodles, adding them to a microwave-safe bowl as you cut them
- Microwave zucchini noodles on high until just wilted, about 5- 7 min
- While zucchini noodles are cooking, add fresh pasta to boiling water and cook until al dente, about 2- 7 minutes, depending on thickness of noodles and how long they were drying
- Serve both kinds of noodles- separately or tossed together- with heated sauce and cheese
