Fried Sage Appetizer (Tailgating- Year Six: Volume 6; September, 2015)


Prep time: 5 min
Cook time: 20- 25 min
Ready in: 25- 30 min
Serves: 4- 6

Ingredients: 
1 c. flour
1/2 tsp. coarse salt
1 c. seltzer water
1 large egg- beaten lightly
Vegetable oil (for frying)
30 large, fresh sage leaves- stems still attached

Directions:
- Mix flour, salt and seltzer, stirring until smooth
- Add egg, and whisk until evenly incorporated
- Set aside
- Heat approximately 1/2" oil in large, heavy-bottomed skillet until a little of the batter sizzles immediately upon contact
- Holding sage leaves by their stems, dip them, one at a time, in batter until lightly coated
- Drop into the hot oil
- Work in batches, and take care not to crowd the pan
- Fry until golden brown, about 1- 2 minutes per side
- Remove to paper towel lined plate and sprinkle with salt
- Serve immediately
