Ingredients:
1/2 c. butter- melted
1 large egg
3/4 c. pumpkin puree
1 c. light brown sugar- packed
1 T. vanilla extract
2 tsp. pumpkin pie spice
1 tsp. cinnamon
1 1/4 c. flour
1 1/4 c. + 2 T. semi-sweet chocolate chips
Directions:
- Preheat oven to 350
- Line an 8x8" baking pan with aluminum foil, spray with cooking spray, and set aside
- Mix egg, pumpkin, brown sugar, vanilla, pumpkin pie spice, cinnamon, and butter until smooth
- Add flour and stir until just combined
- Stir in 1 1/4 c. chocolate chips
- Pour batter into prepared pan, smoothing top lightly with a spatula
- Evenly sprinkle with 2 T. chocolate chips and again smooth top lightly with a spatula
- Bake until a toothpick inserted in the center comes out clean, about 32- 33 min
- Allow bars to cool in pan for at least 30 min before slicing and serving
