Strawberry & Goat Cheese Green Salad with Basil Vinaigrette Recipe (Iron Chef- Year Five: Volume 5; August, 2014)


Prep time: 15 min
Cook time: 5 min
Ready in: 20 min
Serves: 4- 6

Ingredients: 
DRESSING:
10 large basil leaves- thinly sliced
2 T. white wine vinegar
1/4 C. + 2 T. olive oil
Salt and pepper- to taste

SALAD:
1/3 c. sliced almonds
6 c. (packed) red lettuce leaves- torn
1 1/4 c. strawberries- sliced
1/4 c. goat cheese- crumbled

Directions:
- In a blender or mini food processor, combine basil, vinegar, and oil
- Puree until fairly smooth (small pieces of basil are okay)
- Season to taste with salt and pepper
- Cover and refrigerate until ready to serve
- In a small skillet set over medium heat, toast slivered almonds until light golden brown, stirring occasionally, about 5 min
- In a large bowl, combine lettuce, strawberries, almonds, and cheese
- Toss with desired amount of vinaigrette
- Serve immediately
