Sauteed Swiss Chard with Bacon (Surf & Turf- Year Five: Volume 3; June, 2014)

Cook time: 10 min
Ready in: 20 min
Serves: 2- 4

Ingredients: 
Olive oil (for pan)
1 c. bacon- cut into 1/4" dice
2 cloves garlic- smashed
Pinch crushed red pepper flakes
1 bunch Swiss chard- stems removed, cut into 1/2" lengths, leaves cut into 1 1/2" lengths
1/2 c. chicken or vegetable stock
Salt

Directions:
- Coat a large sauté pan lightly with olive oil
- Add bacon, garlic, and crushed red pepper
- Bring pan to medium-high heat
- When garlic has turned golden brown, remove from pan and discard
- Bacon should start to become brown and crispy
- Add Swiss chard stems and stock, and cook until stock has mostly evaporated
- Add Swiss chard leaves and sauté until they are wilted
- Season with salt and serve
