Ingredients:
2 lb. potatoes- peeled, quartered
3 eggs- separated
1 c. 2% milk
3/4 tsp. salt
1/2 tsp. basil
1/4 tsp. white pepper
1 1/2 c. Monterey Jack cheese- shredded
Directions:
- Place potatoes in a large saucepan and cover with water
- Bring to a boil
- Reduce heat, cover, and cook until tender, 15-20 min
- Preheat oven to 350
- Grease a 1 1/2 qt. baking dish
- Drain and mash
- In a small bowl, whisk egg yolks, milk, salt, basil, and pepper
- Gradually stir into mashed potatoes
- Fold in 1 c. cheese
- In a small bowl, beat egg whites on high speed until stiff peaks form
- Fold into potato mixture
- Spoon into baking dish
- Sprinkle with remaining cheese
- Bake, uncovered, until a thermometer reads 160, 40- 45 min
