Creole Rice (Mardi Gras- Year Four: Volume 12; March, 2014)

Cook time: 25 min
Ready in: 30 min
Serves: 4- 8

Ingredients: 
2 c. rice- well rinsed
3 c. water
1/4 c. dark molasses
2 T. red wine vinegar
2 T. lemon juice
1 T. mustard
1/4 c. tomato sauce
2 cloves garlic- minced
1/2 jalapeƱo- stemmed, seeded, and minced
1/4 tsp. cayenne pepper
1/4 tsp. ginger- peeled, minced
1/2 tsp. orange zest- grated
1/4 tsp. fresh thyme- minced
1/4 tsp. nutmeg- grated

Directions: 
- Mix all ingredients well in medium sauce pan
- Bring all to a boil
- Reduce heat and simmer until rice has absorbed all liquid, about 15- 20 min
