Chili Relleno Casserole (Casserole- Year Five: Volume 2; May, 2014)


Prep time: 10 min
Cook time: 50 min
Ready in: 1 hour
Serves: 4- 8

Ingredients: 
1 large can whole jalapeños- seeded, tops removed, cut in 1/2 lengthwise
1- 1 1/2 c. Mexican cheese blend- grated
1 can diced, green chili peppers
4 eggs
1 1/2 c. milk
1/2 c. flour
1/2 tsp. paprika
1 tsp. salt

Directions:
- Preheat oven to 375
- Place all halved jalapeños in a casserole dish, covering entire dish
- Top with 1/2- 3/4 c. cheese
- Mix diced peppers, eggs, milk, flour, and spices well and pour over top of jalapeños and cheese
- Sprinkle remaining cheese over top
- Cover in foil and bake 25 min
- Remove foil and bake for an additional 25 min
