Blackberry Cobbler (Casserole- Year Five: Volume 2; May, 2014)


Prep time: 40 min
Cook time: 45- 50 min
Ready in: 1 hour, 25- 30 min
Serves: 4- 6

Ingredients: 
2 1/2 c. blackberries
1 c. sugar
1 c. flour
1 c. milk
2 tsp. baking powder
1/2 tsp. salt
1/2 c. butter- melted
1/2 t. cinnamon
Whipped cream or ice cream (for serving)

Directions:

- Preheat oven to 375
- Stir together blackberries and sugar in a medium bowl and let stand until some liquid is released and sugar turns pink, about 25 min
- Whisk together flour, milk, baking powder, and salt in a medium bowl
- Stir in butter until blended
- Spread batter in an ungreased, 8" square pan
- Spoon blackberry mixture over batter
- Sprinkle with cinnamon
- Bake until bubbly and golden brown, about 45- 50 min
- Serve warm with whipped cream or ice cream
