Cook time: 40 min- 1 hour
Ready in: 50 min- 1 hour, 10 min
Serves: 4- 6
Ingredients:
1/2 small head cauliflower- cut into florets
1 T. oil
Salt (to taste)
Pepper (to taste)
1/2 c. light cream cheese- room temperature
1/2 c. light sour cream or Greek yogurt
1/2 tsp. thyme- chopped
1 clove garlic- chopped
1 c. aged white cheddar- shredded
Directions:
- Preheat oven to 400
- Toss cauliflower in oil with salt and pepper
- Arrange cauliflower in a single layer on a baking sheet
- Roast until lightly golden brown, mixing half way through, about 20- 30 min
- Reduce temperature to 350
- Puree roasted cauliflower, along with all remaining ingredients, in a food processor and pour into a baking dish
- Bake until sides are bubbling and top is lightly golden brown, about 20- 30 min
