Hot Chicken Salad (Sumptuous Salads- Year Four: Volume 5; August, 2013)

Prep time: 10 min
Cook time: 20 min
Ready in: 30 min
Serves: 8- 10

Ingredients: 
2 c. chicken breast meat- cooked, cubed
1 c. celery- diced
1/2 c. almonds- slivered
1/2 tsp. salt
1/2 tsp. pepper
2 T. lemon juice
1 c. mayonnaise
1 c. sharp cheddar cheese- grated
2/3 c. potato chips- crushed

Directions: 
- Preheat oven to 350
- Spray a 13 x 9" baking dish with cooking spray
- In a large mixing bowl, combine all ingredients except potato chips
- Pour mixture into prepared baking dish
- Spread crushed potato chips on top
- Bake until bubbly, about 20 min
