Nutella Stuffed Funfetti Cookies (EGGceptionally EGGcellent- Year Four: Volume 1; April, 2013)


Prep time: 30 min
Chill time: 20 min
Cook time: 10 min
Ready in: 1 hour
Serves: 10- 20

Ingredients: 
1 box funfetti cake mix
2 eggs
Scant 1/3 c. vegetable oil
1 tsp. vanilla extract
1/2 c. Nutella

Directions: 
- Line a cookie sheet with parchment paper
- Using a small cookie scoop, scoop tsp. size balls of Nutella onto cookie sheet and freeze for about 20 min
- Preheat oven to 350 and line a second cookie sheet (or two) with parchment paper
- In a medium bowl, mix together the funfetti mix, eggs, vegetable oil, and vanilla extract until combined
- Take a walnut sized ball of dough and place a frozen Nutella ball into the center
- Roll the dough ball in your hands until it is smooth and no Nutella is exposed
- Place on cookie sheet about 2" apart
- Bake for 10 min; they will look too soft at first, but do not overbake!
- Allow cookies to cool on cookie sheet
