Taco Cups (Cinco de Mayo- Year One: Volume 2; May, 2010)


Prep time: 5 min
Cook time: 25 min
Ready in: 30 min
Serves: 10

Ingredients:
1/2 lb. ground beef
2 T. taco seasoning
1 can butter biscuits
1/2 c. sharp cheddar cheese
Salsa (for garnish)
Sour cream (for garnish)

Directions:
- Preheat oven to 350
- Spray a muffin tin with cooking spray
- In a large skillet, cook beef over medium heat until browned and crumbly; drain
- Add taco seasoning to the browned meat, stirring well to combine
- Place one biscuit into each of the 10 cups of a prepared muffin tin
- Pat the biscuit dough gently up the side of the cup
- Spoon the meat mixture on top of biscuit dough
- Top with cheese and bake for 10- 12 min or until golden brown
- Serve with salsa and sour cream


*For the Club, Jen used a mini-muffin tin and cut the biscuit dough into mini-muffin sized pieces to make as an appetizer instead of an entree; she found recipe here
