Italian Meat Casserole (Italian- Year One, Volume 1; April, 2010)


Prep time: 40 min
Cook time: 45- 60 min
Ready in: 1 hour, 25- 40 min
Serves: 6- 8

Ingredients:
2 lbs. mild Italian sausage
1 clove garlic- chopped
3 (24 oz.) jars marinara sauce
1 pkg.  frozen spinach, chopped
1 (15 oz.) tub Ricotta cheese
1/4 tsp. sage
3/4 tsp. salt
1 egg
1/2 tsp. garlic powder
1 pkg. lasagna noodles
2 rolls of mozzarella cheese-  shredded
11/2 c. parmesan cheese- grated or shredded

Directions:
- Remove sausage casings and put in a large skillet
- Add garlic clove  to sausage and brown until completely cooked
- Add marinara sauce to skillet and cook for two minutes
- Thaw spinach, drain and put in a large bowl
- Add ricotta, sage, salt, egg, and garlic powder and mix well
- Cook noodles according to package directions, transfer to a colander and rinse with cold water
- Pour 1/2 of the sauce in a large baking dish
- Top with a layer of 1/2 of the noodles
- Top with a layer of the 1/2 of the spinach mixture
- Sprinkle 1/2 of the mozzarella cheese over the spinach mixture
- Repeat previous layers, sauce, noodles, spinach mixture, and cheese
- Sprinkle parmesan cheese over top
- Bake uncovered at 350 for 45- 60 minutes or until bubbly
