Stuffing (Holiday Favorites- Year Two: Volume 9; December, 2011)

Cook time: 5- 9 hours
Ready in: 5- 9 hours, 15 min
Serves: 24
Ingredients:
1 c. butter
2 c. onion- chopped
2 c. celery- chopped
12 oz. mushrooms- sliced
1/4 c. fresh parsley- chopped
12 c. dry bread cubes
1 1/2 tsp. sage
1 tsp. thyme
1/2 tsp. marjoram
1 tsp. poultry seasoning
1 1/2 tsp. salt
1/2 tsp. black pepper
4 c. chicken broth (or less)
2 eggs- beaten
Directions:
- Melt butter in a skillet over medium heat
- Cook onion, celery, mushroom, and parsley in butter, stirring frequently
- Spoon cooked vegetables over bread cubes in a very large mixing bowl
- Add all seasonings
- Pour in broth gradually, using just enough (not necessarily all 4 c.) to moisten
- Mix in eggs
- Transfer mixture to slow cooker
- Cover and cook on high for 45 min
-Reduce heat to low and cook for 4- 8 hours
