Spicy Indian Salad (East Meets West- Year Three: Volume 3; July, 2012)


Prep time: 20 min
Cook time: 17- 25 min
Ready in: 37- 45 min
Serves: 4- 6

Ingredients:
1 small red onion- diced
1 jalapeño- diced
2 cloves garlic- diced
Olive oil
1 tsp. chili powder
1 T. garam masala
1 can garbanzo beans- drained
1 c. cherry tomatoes
1 cucumber- seeded
1 bunch cilantro- roughly chopped
1/2 lemon- juiced
Yogurt (for topping)
Pita chips (for topping)

Directions:
- Saute onions, jalapeño, and garlic in a little olive oil over medium heat until translucent, about 5- 10 min
- Add garbanzo beans and cook another 5 min, stirring often
- Add chili powder and garam masala and cook for another 2 min
- Let garbanzo beans cool
- Toss with tomatoes, cucumbers, cilantro, and lemon juice
- When ready to serve, top with yogurt and pita chips
