Shrimp Ceviche with an Avocado Twist (Frigid Favorites- Year Two: Volume 3; June, 2011)


Prep time: 10 min
Cook time: 2 min
Chill time: 48 min
Ready in: 1 hour
Serves: 4- 6

Ingredients:
2 c. shrimp- deveined
1/2 c. orange juice
3/4 c. lime juice
1/2 c. ketchup
2 c. tomato juice
1/2 c. fresh cilantro leaves- chopped
1/2 red onion- diced
1 avocado- diced
Dash hot sauce
Salt
Pepper
1 c. plum tomatoes- seeded and diced

Directions:
- Boil shrimp in salted water until fully cooked, about 2 min
- Chill
- Mix all ingredients, including chilled shrimp, in a bowl
- Let sit for about 30 minutes
- Serve with tortilla chips
