Grilled Chicken Sandwiches (Frigid Favorites- Year Two: Volume 3; June, 2011)

Ingredients:
1 c. mayonnaise
1/8 tsp. pepper
1/8 tsp. garlic powder
1/8 tsp. celery salt
4 c. grilled chicken- chopped and chilled
1/2 c. sweetened, dried cranberries
2/3 c. salted cashews
8 slices bread- toasted
4 T. mayonnaise
4 large red leaf lettuce leaves
2 celery stalks- sliced
1 ripe tomato- sliced
Directions:
- Whisk together mayonnaise, pepper, garlic powder, and celery salt until combined
- Combine chicken, cranberries, and cashews in a large bowl
- Pour mayonnaise mixture over chicken mixture and stir until evenly combined
- Spread 1 1/2 tsp. of mayonnaise on each slice of toast
- Divide chicken salad between four slices of toast
- Top each with a lettuce leaf and a slice of tomato and complete each sandwich with the remaining toast slices
