Roasted Asparagus (Cupid's Delight- Year Two: Volume 11; February, 2012)
Prep time: 10 min Cook time: 15 min Ready in: 25 min Serves: 4 Ingredients: 2 bunches asparagus 2 T. olive oil 1/2 tsp. salt Pepper (to taste) Parmesan cheese- grated or shaved Directions: - Pre-heat oven to 450 - Trim woody ends from asparagus, usually about 1 1/2", and lightly peel the remaining stalks - Spread spears in a single layer on a baking sheet - Drizzle with olive oil, sprinkle with salt and pepper, and roll to coat thoroughly - Roast asparagus until lightly browned and tender, about 8- 10 min, shaking pan about halfway through to turn the asparagus - Arrange roasted asparagus on a serving platter and top with some Parmesan - Serve warm or at room temperature *Jen found recipe here
