Open-faced Chicken Salad Sandwiches (Picnic in the Park- Year Two: Volume 4; July, 2011)

Serves: 6

Ingredients:
1 lb. roasted chicken- chopped
3 1/2 T. crème fraiche
5 T. mayonnaise
3 T. capers
1/3 c. apples- diced
1/3 c. red grapes- halved
1 1/2 T. Dijon mustard
1 T. lemon juice
1/3 celery- diced
Salt (to taste)
Pepper (to taste)
1 loaf ciabatta bread-  sliced and toasted
2 bunches watercress

Directions:
- Combine all ingredients, except for bread and watercress, in a bowland mix well
- Taste for seasoning and add salt and pepper as necessary
- Spread chicken salad on toasted ciabatta, top with watercress, and serve
