Asian Coleslaw (Picnic in the Park- Year Two: Volume 4; July, 2011)


Prep time: 15 min
Chill time: 3- 24 hours
Ready in: 3- 24 hours, 15 min
Serves: 6

Ingredients:
DRESSING:
3/4 c. olive oil
1/2 c. sugar
1/3 c. white vinegar
2 pkg. beef top ramen seasoning

SALAD:
1 lb. shredded cabbage with carrots
2 pkg. top ramen noodles broken (un-cooked)
1 c. sunflower seeds- husked
1 c. almonds- slivered and toasted
1 bunch green onions- sliced

Directions:
- Prepare 3- 24 hours ahead of serving time by mixing all ingredients and leaving in refrigerator
- Mix all salad ingredients
- Toss salad with dressing just before serving to keep noodles crunchy
