Loaded Baked Potato Soup (What a Crock... Pot- Year One: Volume 10; January, 2011)


Prep time: 15 min
Cook time: 4- 8 hours
Ready in: 4- 8 hours, 15 min
Serves: 6- 8

Ingredients:
SOUP:
6 large baking potatoes- peeled, cut in 1/2" cubes
1 large onion- chopped
1 qt. chicken broth
3 cloves garlic- minced
1/4 c. butter
2 1/2 tsp. salt
1 tsp. pepper
1 c. cream or half-n-half
1 c. sharp Cheddar cheese- shredded
3 T. fresh chives- chopped

GARNISHES:
1 c. sour cream
8 slices bacon- fried & crumbled
Cheese

Directions:
- Combine first seven soup ingredients in a large crock pot
- Cover and cook on high for 4 hours or low for 8 hours (potatoes should be tender)
- Mash mixture until potatoes are coarsely chopped and soupy is slightly thickened
- Stir in cream or half-n-half, cheese, and chives
- Top with desired garnishes
