Giants-fetti Cupcakes (Game Day Favorites- Year One: Volume 8; November, 2010)


Prep time: 1 hour
Cook time: 25 min
Ready in: 1 hour, 25 min
Serves: 4- 6

Ingredients:
CUPCAKES:
1 box white or vanilla cake mix (with oil, eggs, etc. according to back of box)
Orange and black sprinkles

DECOR:
1/2 c. butter (room temperature)
8 oz cream cheese (room temperature)
2- 3 c. powdered sugar
1 tsp. vanilla extract
Orange and black sprinkles
Red, orange, and black food colorings
Toothpicks

Directions:
- Prepare cupcakes according to cake mix instructions, adding sprinkles to mix before pouring into cupcake tin, then cool
- While cupcakes are cooling, mix butter and cream cheese together with an electric mixer for about 3 min on medium speed until very smooth
- Scrape down sides and bottom of bowl to ensure even mixing
- Add vanilla extract and mix
- Slowly add powdered sugar, gradually until you get to desired sweetness and thickness
- When cupcakes are cool, frost half and add sprinkles
- Frost another 1/4 of the cupcakes (theoretically about 4-  6) and paint baseball seams using red food coloring and a toothpick
- Frost the rest of the cupcakes and paint the Giants logo with orange and black food colorings and toothpick
