Garlic and Rosemary Mashed Potatoes (Holiday Favorites- Year Two: Volume 9; December, 2011)


Prep time: 20 min
Cook time: 55 min- 1 hour
Ready in: 1 hour, 20 min
Serves: 6

Ingredients:
2 lb. red potatoes
1 head of garlic
4 1/2 tsp. olive oil
1 1/2 T. rosemary
3/4 c. milk
Salt (to taste)

Directions:
- Scrub and pierce potatoes
- Bake at 400 until tender, about 45- 55 min
- Meanwhile, remove papery outer skin from garlic bulb (do not peel or separate cloves)
- Cut top off bulb and place on a piece of heavy-duty foil
- Drizzle garlic bulb with 1/2 tsp. olive oil
- Wrap foil around bulb and bake at 400 until softened, about 30- 35 min
- Cool for 10 min
- Squeeze softened garlic into a large mixing bowl
- Cut potatoes in half
- Scoop out pulp and add to garlic
- Discard potato skins
- Mash potatoes
- In a small saucepan, saute rosemary in remaining olive oil for 2 min
- Add to potato mixture
- Add milk and salt
- Beat until fluffy
