Fragrant Garlic Chicken (Asian Persuasion- Year One: Volume 6; September, 2010)

Ready in: 25 min
Serves: 4

Ingredients:
2 boneless skinless chicken breasts- cut into very small cubes (or 1 [6 oz.] pkg. tofu)
1 c. cornstarch
3 T. vegetable oil
20 cloves garlic- sliced thinly
2 scallions- ends trimmed and sliced thinly on the diagonal
1 T. butter
3 T. soy sauce
2 T. Shaoxing wine (Chinese cooking wine)
6 T. water
1/2 tsp. sugar
Pepper

Directions:
- Dredge chicken in cornstarch
- Heat oil in wok on high heat
- Saute garlic until crisp golden brown
- Add chicken and lower to medium-high heat
- Add soy sauce, wine, sugar, and water and continue to stir-fry until chicken is golden brown
- Add pepper to taste
- Remove from heat
- Stir in scallions
- Serve hot or chilled
