Enchiladas (Cupid's Delight- Year Two: Volume 11; February, 2012)
Prep: 20 min Cook: 10- 15 min Ready: 30- 35 min Serves: 6- 8 Ingredients: 3- 4 chicken breast- cooked and cut into small cubes 8 flour tortillas 2- 3 c. Monterey jack and cheddar cheeses- shredded 1 can red enchilada sauce 1 can diced green chili peppers Directions: - Pre-heat oven to 350 - Dip tortillas in sauce - Add chicken, cheese, and diced chilies - Roll up and place in glass, baking dish - Add cheese and extra chilies on top - Add more enchilada sauce over tortillas - Bake for about 30- 40 min
