Corn Dog Muffins (White Trash Bistro- Year One: Volume 7; October, 2010)
Prep time: 10 min Cook time: 15 min Ready in: 25 min Serves: 18 Ingredients: 2 (8.5 oz.) pkg. corn bread/ muffin mix 2 T. brown sugar 2 eggs 1 c. milk 1 (11 oz.) can whole kernel corn- drained 5 hot dogs- chopped into bite-sized pieces Directions: - Preheat oven to 400 - Grease or paper-line a muffin tin - In a large bowl, combine corn bread mix and brown sugar - In a separate bowl, combine eggs and milk - Stir dry ingredients into wet until moistened (batter will be thin) - Stir in corn and hot dogs - Fill muffin cups 3/4 full - Bake until golden brown, about 14- 18 min - Serve immediately or refrigerate *Jen found recipe here
