Chili for a Crowd (Game Day Favorites- Year One: Volume 8; November, 2010)


Prep time: 5 min
Cook time: 30- 45 min
Ready in: 35- 50 min
Serves: 8

Ingredients:
1 T. olive oil
2 onions- chopped
2 bell peppers- cut into 1/2"pieces
4 cloves garlic- chopped
2 lb. ground beef
1 (6 oz.) can tomato paste
1/4 c. chili powder
2 tsp. ground cumin
2 (12 oz.) bottles lager beer
2 (19 oz.) cans kidney beans
1 (28 oz.) can diced tomatoes (not drained)

2 1/2 tsp. salt
1/2 tsp. pepper
Toppings (sour cream, radishes, scallions, avocados, jalapeƱos, cilantro, cheddar cheese, and toasted pumpkin seeds, etc.)

Directions:
- Heat oil in a large pot over medium-high heat
- Add onions, bell peppers, and garlic and cook, stirring occasionally, until soft, 6- 8 min
- Add beef and cook, breaking it up with a spoon, until no longer pink, 5- 7 min
- Add tomato paste, chili powder, and cumin and cook, stirring, for 2 min
- Add beer, beans, tomatoes and their juices, salt, and pepper and simmer over medium heat, stirring occasionally, until thickened, 20- 25 min
- Serve with toppings as desired
