Cauliflower-crust Pizzas (A Time to Shred- Year Six: Volume 10; January, 2016)


Prep time: 25 min
Cook time: 26- 27 min
Ready in: 51- 52 min
Serves: 1- 6

Ingredients: 
1/4- 1/2 head cauliflower
3 c. mozzarella
1 tsp. oregano
1/2 tsp. garlic salt
1 tsp. garlic- crushed
1 egg
Olive oil
1/4 c. kalamata olives (for topping)
1/2 c. artichoke hearts- quartered (for topping)
1/4 c. sun-dried tomatoes- sliced (for topping)

Directions:
- Preheat oven to 450
- Chop cauliflower into chunks, and pulse in food processor until it looks like grain
- Microwave for 8 min
- In a medium bowl, stir together 1 c. riced cauliflower, 1 1/2 c. mozzarella, oregano, garlic salt, garlic, and egg
- Grease a cookie sheet
- Pat cauliflower mixture into a 9-inch circle on cookie sheet
- Brush with olive oil
- Bake crust for 15 min
- Remove crust from oven
- Preheat broiler
- Top pizza with remaining mozzarella, olives, artichokes, and sun-dried tomatoes
- Broil until cheese melts, about 3- 4 min
