Slow Cooker Chicken Makhani, aka: Butter Chicken (Indian- Year Six: Volume 8; November, 2015)


Prep time: 15 min
Cook time: 6 hours
Ready in: 6 hours, 15 min
Serves: 4- 8

Ingredients:
1 T. vegetable oil
4 skinless chicken breasts
2 garlic cloves- crushed
1 onion- finely chopped
1 T. curry powder
2 T. garam masala
1 tsp. turmeric
1/2 tsp. ginger
2 tsp. sugar
1/2 tsp. salt
Pepper, to taste
1 (6 oz.) can tomato paste
2/3 c. plain yogurt
1 c. coconut milk
Chopped coriander (for garnish)

Directions:
- In a pan on medium heat, heat oil
- Add chicken, to seal and cook, 2- 4 min per side
- Transfer to slow cooker
- In the same oil, fry onions until translucent
- Add garlic and cook, 1 min
- Add onions and garlic to the chicken in slow cooker
- In a mixing bowl, mix together spices
- Add tomato paste, yogurt, and coconut milk to spices, and mix well
- Pour sauce over chicken and onions, and give it a good stir
- Cook on low for up to six hours
- Once cooked, serve with plenty of chopped coriander
