Spaghetti Mini-Muffins (Tailgating- Year Six: Volume 6; September, 2015)


Prep time: 30- 35 min
Cook time: 20- 25 min
Ready in: 50 min- 1 hour
Serves: 6- 12

Ingredients: 
4 c. vermicelli noodles- cooked
1/3 c. butter- melted
2 eggs
3/4 c. Parmesan cheese- grated
3/4 c. ricotta cheese
2 c. spaghetti sauce
8 oz. mozzarella cheese- shredded
1/4 c. Parmesan cheese- shredded

Directions:
- Preheat oven to 350
- Grease a muffin pan
- In a bowl, mix vermicelli and butter
- In another bowl, whisk eggs
- Add 1/2 c. grated Parmesan cheese to eggs, and mix until completely incorporated
- Pour egg mixture into noodle mixture and mix well
- Divide noodle mixture among muffin cups
- Press noodles to form a nest in center of each cup
- Mix together ricotta cheese and 1/4 c. grated Parmesan cheese
- Spoon mixture into center of each noodle nest
- Divide spaghetti sauce among spaghetti muffins, pouring into each muffin cup
- Top with shredded mozzarella and shredded Parmesan cheese
- Bake for 20- 25 min
- Serve
