Fig and Goat Cheese Bruschetta (Fruity Fun- Year Four: Volume 3; June, 2013)

Cook time: 30 min
Ready in: 1 hour
Serves: 10- 20

Ingredients: 
1 1/4 c. dried, Mission figs- chopped
1/3 c. sugar
1/3 c. orange sections- coarsely chopped
1 tsp. orange rind- grated
1/3 c. orange juice
1/2 tsp. fresh rosemary- chopped
1/4 tsp. black pepper
40 (1/2" thick) slices French bread baguette- toasted
1 1/4 c. goat cheese- crumbled
5 tsp. walnuts- finely chopped

Directions:
- Combine first 7 ingredients in a small saucepan and bring to a boil
- Cover, reduce heat, and simmer until figs are tender, about 10 min
- Uncover and cook or until mixture thickens, about 5 min
- Remove from heat and cool to room temperature
- Preheat broiler
- Top each bread slice with 1 1/2 tsp. fig mixture and 1 1/2 tsp. goat cheese
- Arrange bruschetta on a baking sheet
- Sprinkle evenly with walnuts
- Broil 2 minutes or until nuts begin to brown
- Serve warm
