Cornbread Casserole (Cinco de Mayo- Year One: Volume 2; May, 2010)
Prep time: 5 min
Cook time: 40- 45 min
Ready in: 45- 55 min
Serves: 9
Ingredients:
1 can corn- drained
1 can creamed corn
1 c. sour cream
1 box Jiffy corn bread mix
1/2 c. butter- melted
Directions:
- Preheat oven to 350
- Mix all ingredients together in a bowl
- Pour into a 9 x 9" baking dish and bake for 40- 45 min
- Let sit; cool for 10 minutes
*Optional: Bake for 40 minutes; take out and cover top with shredded cheddar cheese; bake for additional 10-15 min
