President Obama's White House Cauliflower Gratin (Presidential Favorites- Year Four: Volume 11; February, 2014)


Prep time: 15 min
Cook time: 38- 50 min
Ready in: 53 min- 1 hour, 5 min
Serves: 6- 12

Ingredients: 
1 (3 lb.) head cauliflower
2 T. butter
2 T. flour
1 1/4 c. milk
Salt (to taste)
Pepper (to taste)
1/4 tsp. nutmeg
2 c. Gruyere cheese- shredded
1/2 c. Parmesan cheese- shredded
1/4 c. coarse bread crumbs


Directions: 
- Preheat oven to 350
- Spray a 1 qt. casserole dish with cooking spray
- Trim cauliflower and cut into florets
- Steam cauliflower in a large pot, with a little water, over medium-low heat until tender
- Remove cauliflower from pot to a towel to remove excess moisture
- Heat butter in a medium saucepan over medium heat
- When butter has melted, whisk in flour
- Cook, stirring, for 2 min
- Add milk, whisking constantly to make sure there are no lumps
- Cook until sauce to thickens, about 3- 4 min
- Season with salt, pepper, and nutmeg
- Put cauliflower into prepared pan
- Top with half of the cheese
- Pour sauce over cheese
- Top with remaining cheese and bread crumbs
- Bake uncovered until golden and bubbly, about 20- 30 min
