President Obama's Family Chili (Presidential Favorites- Year Four: Volume 11; February, 2014)


Prep time: 15 min
Cook time: 45 min- 1 hour
Ready in: 1 hour- 1 hour, 15 min
Serves: 4- 6

Ingredients: 
1 T. olive oil
6 slices thick bacon- roughly chopped
1 large onion- chopped
1 green bell pepper- chopped
Several cloves garlic- chopped
1 lb. ground beef or turkey
1/2 tsp. cumin
1/4 tsp. oregano
1/4 tsp. turmeric
4 basil leaves- chopped
1 T. chili powder
3 T. red wine vinegar
1 (14 oz.) can red kidney beans- drained
6 roma tomatoes- roughly chopped
Rice- cooked (for serving)
Cheddar cheese- shredded (for garnish)
Sour cream (for garnish)
Fritos (for garnish)

Directions: 
- Heat oil over medium heat in a large pot
- Cook bacon until crisp, remove with a slotted spoon, and cool on paper towels (do not drain pan)
- Cook onion, bell pepper, and garlic in bacon grease until soft, about 10 min
- Add ground meat to pot and brown
- Add spices and herbs to pot and mix well
- Add red wine vinegar and tomatoes
- Simmer, stirring occasionally, until tomatoes break down, about 10 min
- Add kidney beans and cook about 5 min
- Serve over rice, and top with cheese, sour cream, and crumbled Fritos
