Veggies with Easy Cheesy Sauce (Let's Get Saucy- Year One: Volume 11; February, 2011)


Prep time: 5 min
Cook time: 15- 20 min
Ready in: 20- 25 min
Serves: 4-6

Ingredients:
VEGETABLES:
1 bunch asparagus- sliced diagonally
3 zucchinis- sliced into spears
1 tsp. olive oil
1 clove garlic- minced
Salt
Pepper
1 tsp. butter

SAUCE:
1 c. mayonnaise
1/2 c. milk
1/2 c. white Cheddar cheese- shredded
1/2 tsp. paprika
1/4 tsp. white pepper
Pinch of salt

Directions:
- Saute vegetables in olive oil and garlic
- While cooking, season lightly with salt and pepper
- Add butter just before vegetables are done
- Keep warm
- In a separate pot, blend sauce ingredients and heat, stirring
- Drizzle sauce over vegetables and serve


*I added red food coloring the sauce to make it pink for February/ Valentine's Day; special thanks to my Cuz, Esther, for making up the recipe for me!
