Turkish Lentil Soup (SOUPer Yummy- Year Two: Volume 7; October, 2011)

Serves: 5
Ingredients:
1 c. red lentils
4 c. vegetable stock
1/2 c. white potato- peeled and diced
1/4 c. mild onion- finely chopped
1 tsp. paprika
Salt (to taste)
Pepper (to taste)
Directions:
- Place lentils in a colandar and rinse, sifting through and removing damaged beans
- Place washed and cleaned lentils into a medium pot
- Add stock, potatoes, onions and paprika
- Bring pot to a boil, then reduce to a simmer
- Loosely place a lid on pot, leaving slightly ajar as to allow some evaporation
- Cook until the lentils are tender, about 35- 45 min
- Add salt and pepper to taste
- Place all but 1 c. of soup into a blender or food processor and blend briefly
- Return blended soup to pot with reserved cup of soup
- Heat through and serve
