Stuffed Appetizers (Stuffed- Year Three: Volume 7; November, 2012)


Prep time: 20 min
Cook time: 10- 20 min
Ready in: 30- 40 min
Serves: 3- 4

Ingredients:
1 large sheet puffed pastry- thawed for about 10 min
1 ripe avocado- halved and mashed
1/3 c. cream cheese
1/3 c. salsa
Salt (to taste)
Pepper (to taste)
1 egg- beaten

Directions:
- Preheat oven to 400
- Prepare 2 baking sheets with parchment paper or cooking spray
- Flour countertop or working surface and roll out pastry square as thinly as possible, to measure 36 x 36"
- With a pizza cutter or knife, slice puff pastry into approximately 2 x 2" squares, creating 18 squares
- On half of the squares, place about 1 T. avocado, 1 tsp. cream cheese, 1 tsp. salsa, and a sprinkle of salt and pepper
- Use remaining squares as lids and place one lid over each filling mounds
- Seal pastry packages by pressing the edges with a fork, taking care to seal the edges well, pressing the fork in repeatedly, so no filling escapes during baking
- Brush each of the pastry packages with egg
- Bake until desired browning and puffing has occurred, about 10- 20 min
- Watch closely after 10 min, to avoid over-browning
- Remove from oven and serve
